Yesterday we had some friends come over for a beach day so I made some quick salsa…well I guess its more of a pico de gallo but you could blend it I guess! I don’t measure but here are the pictures and then I’ll tell you the ingredients. Just put more of what you like and less of what you don’t! And don’t forget, the tomatoes will give off juices so don’t add too much in the beginning because within hours it’ll be a bath!
(yes and I just noticed I forgot the “e” in tomatoes but I refuse to change it-you get the drift!)
And the finished product!
So here is what I put in:
vine rip tomatoes
green onions or scallions
celery (I just tried it this time to add some crunch-I like it)
fresh squeezed lime juice
extra virgin olive oil (just a tad)
salt & pepper
Mix it up and add chips! We went through this whole bowl at the beach yesterday with some salty chips-perfection!
